Join Aaron and Emma, pizza maestros and founders of Slice Versa, their mobile wood-fired pizza oven, for an evening of pizza making and cooking in the professional pizza rig! Aaron will demonstrate how to make proper pizza sauce and also all of the ins and outs of pizza dough (yeast, flour, proofing, oh my!). Participants will stretch and form their own pizzas using authentic techniques including the “Neapolitan slap”! You’ll top the pizzas, and Emma will show you how to cook in the mobile pizza oven, then enjoy some pizza as we wrap up class.
Each participant will also enjoy a glass of wine or beer (if older than 21) or a fizzy water and take home a fresh pizza dough ball and pizzas made in class (if you don’t eat them all!)

See ya later dry sad biscuits! Our resident biscuit maker, Holland Bankston, will teach you the techniques to bake up fluffy, savory, buttermilk biscuits. Choose flavor combos for your own batch of 6 biscuits and bake them during class! We’ll also fancy-up your biscuits with an easy homemade butter recipe from scratch that you can eat slathered on your warm biscuits.

She’ll show you the techniques for roasting the chicken, then creating a savory pan sauce. You’ll also learn the secrets to decadent and silky mashed potatoes and a simple seasonal vegetable to accompany the dish.

What’s better than learning how to bake bread? Learning how to bake bread with mimosas! Join professional baker Emma Luster to learn how to make basic bagel dough, then shape the dough into the iconic bagel ring. You’ll learn the multi-step cooking process while customizing your bagel flavors. You’ll also learn to create a “schmear” for topping. Once baked to perfection, you can enjoy those bagels at our bagel brunch bar stocked with all the fixings ….plus mimosas!
Attendees will take home bagels made in class, the recipe, and enjoy a mimosa in class (if over 21).

Prepare yourself for an afternoon of pork, pork, and more pork as Ken Hess, owner and smoking expert of County Smoak, guides us through a pork journey. You’ll learn his smoaking basics knowledge and how to prepare a menu of meaty items like Smoaked Pork Steaks, Brined Double Pork Chops, and Pork Spare Ribs. And then we’ll complete the meal with learning how to create sides like Smoaked Tomato Grits, Maple Sweet Potato Puree, and Grilled Broccoli Rabe.
Class attendees will participate in smoaking the ribs and pork steaks and grilling the pork chops and broccoli rabe. You’ll learn how to make the pork chop brine, grits, and sweet potato puree in addition to mixing up pork steak seasoning sauce.
Participants will enjoy sampling all items on the menu plus some food to-go, fun swag to take home, and the priceless smoaking expertise from our local smoak house guru, Ken Hess!

Many cultures have a version of dumplings and Italians are no different! These little pillows can be made with either potatoes or ricotta cheese, and Chef Marisa Jones will teach you how to do both! Learn the hands on techniques for rolling and forming your own light and fluffy gnocchi (say: knee-oh-kee) plus her secrets to a rich and scrumptious classic Bolognese meat sauce.
Participants will make their own gnocchi to take home, have a gnocchi snack in class, receive recipes for all, and enjoy a glass of wine (if older than 21) or a non-alcoholic soda or seltzer.

Join Stephanie Fees, professional chef and founder of Lynchburg’s own Scratch Pasta Co. for an evening of pasta making and cooking! She’ll share pasta fun facts, demonstrate how to make fresh pasta dough the traditional way, then roll and cut fresh noodles. Then you’ll roll and cut your own fresh noodles to take home! Stephanie will demonstrate how to best combine marinara sauce with pasta, then participants will enjoy a pasta snack in class.

Pâte à Choux (say: pat-a-shoe) is the delicious and delicate pastry that is the base for cream puffs, eclairs, savory gougeres and fancy profiteroles —to name a few! Curious how to make them all? Then join professional pastry chef, Emma Luster, in this choux class to learn the basics. Attendees will mix their choux dough, learn how to pipe proper cream puff and eclair shapes, and bake off the dough. You’ll learn how to make crème diplomat then fill and decorate your pastries.

Know the difference between a fine chop and a mince? How to properly store your knives? How to safely cut an onion? Come learn the answers to these questions and more from culinary instructor Chef Marisa Jones. She'll teach you how to properly execute 7 basic knife cuts, plus knife safety, storage, care, plus many extra professional tips from an expert! Participants will see how to use their freshly chopped ingredients to make a delicious seasonal recipe.
Please bring in your own 8" chef knife to use during class (choose “Basic Ticket”). Take a peek inside the amazing world of Asian dumpling making and dim sum! In this introductory course, Chef Marisa Jones will teach participants how to make a variety of handmade wontons, shumai, spring rolls, and steamed buns using traditional methods and ingredients. Learn how to expertly fold and craft dumplings, use a bamboo steamer, and properly deep fry.

Welcome to The Flour District’s Baking Series Classes! In session #1, attendees will learn all about buttercream frostings. You’ll make buttercream, and our cake professional will walk you through 3 types of buttercreams (Swiss, American, and Italian). You’ll watch a piping demo and learn all the basics like petals, ribbons, ruffles, scroll work, and writing to practice in class with help from our expert.
In session #2 attendees will mix and bake 8” vanilla cake layers, learning the do’s and don’ts of cake making. We’ll recap piping from session 1 then learn a few more advanced piping techniques to practice.
In session #3 attendees will assemble and decorate their cakes. You’ll learn the secrets of a flavored syrup soak plus other handy tricks. Then our cake professional will demonstrate how to properly stack layers, apply a crumb coating, then expertly apply and smooth out the buttercream frosting. Attendees will assert their new decorating confidence to make their own cake works of art!
Class durations will be about 1 - 1.5 hours per session. We’ll store your cakes for class and provide all necessary equipment. Attendees will take home their beautifully decorated cake plus a piping tip set.
